The Alfond Inn at Rollins Appoints Marcus Henry as Director of Food and Beverage

The Alfond Inn at Rollins is pleased to announce the appointment of Marcus Henry as Director of Food & Beverage. A seasoned hospitality leader with experience across luxury hotels, large-scale event operations, and globally recognized culinary brands, Henry will oversee the Inn’s food and beverage program, including dining operations, special events, and culinary experiences across the property.
Henry brings more than a decade of experience in luxury hospitality, with leadership roles at globally recognized brands including The Ritz-Carlton Company, The Greenbrier, Thompson Dallas, and Wolfgang Puck Catering. Known for his energetic leadership style and focus on creating memorable guest experiences, he joins The Alfond Inn at Rollins at a moment of continued growth for the property’s culinary and hospitality programming.

In his new role, Henry will lead the Inn’s food and beverage operations while developing culinary programming and guest experiences that reflect the cultural character of Winter Park and the property’s longstanding relationship with Rollins College.

Prior to joining The Alfond Inn, Henry served as Pre-Opening Director of Food & Beverage at Hudson’s Detroit, where he led the launch of the food and beverage program for the landmark redevelopment. Before that, he held a senior food and beverage leadership role in the Middle East, overseeing large-scale hospitality and event operations.
Earlier in his career, Henry led banquet and event operations across major resort and hotel properties. He began his career in high-profile catering and holds degrees in Culinary Arts Management and Culinary Arts from The Culinary Institute of America in Hyde Park, New York.
